Roasted Sausage & Veggies

Ingredients:

1 package (at least 1 pound) of your favorite sausage links (i used kielbasa)

5 medium-sized potatoes (i used red bliss)

1 large red pepper

1 large onion, sliced

3 table spoon olive oil

1 teaspoon salt

1 teaspoon freshly black ground pepper

2 teaspoon dried rosemary

3 tablespoons adobo seasoning

Preparation:

Spray a large baking pan with nonstick spray (i covered my pan with tinfoil)

Slice sausages into thin rounds, about 1/5″ thick.

Cut potatoes into 1/2″ chunks.

Slice onion and pepper into strips

Place all ingredients on baking sheet and drizzle oil over. (i used olive)

Toss everything together in the oil, making sure everything feels coated.

Add salt, pepper and spices.

Toss everything again.

Bake at 400°F for about 30-35 min or until potatoes are tender. If all goes well it will look like this….

    Of coarse it was good or i would not post it right? That being said i cant describe how flavorful and good it was. There is a nice smokey, saltiness from the kielbasa and the red peppers & onions made it sweet and the spices top it off.
