Baked “Fried” Chicken

I promised i would post this for my friend and fellow chef at heart steve (blackdog) which also made me create this new category “Food & Drink” since i love to cook. Mine as well share it!

So the point i guess of baked fried chicken is to have your cake and eat it too, you get the fried chicken taste without frying it. That being said, you could 100% take this recipe and just fry it!


  • 6 boneless, skinless chicken breast cut into thirds

  • 1 cup all-purpose flour

  • 1/2 teaspoon salt

  • 1 tablespoon seasoned salt.

  • 3/4 teaspoon pepper

  • 2 teaspoon paprika

  • 1/2 stick butter (or 1/4 cup)

  • Buttermilk

  • 1 gallon-size Ziploc bag (optional, but i used it.)

So for step one i cut the chicken breasts into thirds. Making moderate size pieces. Now i always modify recipes and the one i used as a base did not include an egg wash, i asked good ol’ blackdog my go to on food related questions and he recommended it.

Step two: was to soak the pieces of chicken in a bowl of buttermilk cover and refrigerate, the longer the better, i went with 45 minutes because it was a last minute meal idea, next time i will soak it overnight.

When your ready to cook pre-heat your over to 400. Now if you have the means, i use my tablet (it could be an ipad) to have my recipe on it so i can refer back to it and i usually play some music through it as well (grooves and foods!)

20140924_172531Will the oven pre-heats make your batter. Combined spices & flour above and i did this in the large ziplock bag, you can also go with the bowl and dip if you like. After that make your egg wash.

20140924_173326Now take the chicken out of the buttermilk and shake off excess milk, dip in egg wash, put in back, roll around. Do this all pieces. Once all pieces are in the bag zip it up and shake like crazy. This is what i did and i only needed one coat, it was the perfect amount for my liking, if you want you can go egg wash batter, egg wash, batter if you prefer.

With the over preheated take your dish, i used a normal rectangle glass dish and take your butter, cut half a stick into smaller pieces and place them strategically in the pan and put the pan in the pre-heated over so the butter melts.

20140924_173902Now after the pan comes out spray it will non stick spray around the sides and any place that may need it.

20140924_174316Now place your chicken also in a strategic pattern in the pan and cook uncovered for 13-15 mins.


Flip chicken and cook for another 13-15 mins.

20140924_183413If all goes well it should look like this or better! Well that’s it. If your truly into fried chicken then your going to want to pair this with some mashed potatoes and country gravy, extra points for biscuits! When i get a good gravy recipe ill share it!

[note note_color=”#66b8ff”]Personal Side Note: I like my batter to have lots of flavor, KFC uses 11 herbs and spices and they aren’t even good fried chicken, this recipe only used a few. I personally tripled the amount the spices called for in this recipe![/note]
